In this hands-on class, you will learn the history and basic techniques of creating the sweet and savory pastries from a pate a choux (pot-a-shoo) dough. You will make your own dough and pipe cream puffs and eclairs. You will see how these treats puff up, ready for the filling of your choice or add some cheese and herbs to make Gougere, a savory appetizer. We’ll be making pastry cream and learn basic sugar work you’ll use to create a mini Crouquembouche. At the end of the class, you’ll master your mixing, piping, and filling techniques. You’ll be going home ready to impress your friends and family with your newly acquired basic French baking skills.
